It’s almost Thanksgiving, the holiday which is surrounded by pumpkin. This MeatlessMonday.com recipe is for candied pumpkin, which, to us, sounds AMAZING as a side dish this Thanksgiving. Or tonight…. Thanks to Donna of Apron Strings for the recipe!
Serves 8
- 4 cups pumpkin, peeled & cut into 1 inch cubes
- 2 cups water

1 cup dark brown sugar
Place the pumpkin and water together in a small saucepan over medium-high heat. Bring to a boil and cook for 15-20 minutes, or until the pumpkin flesh becomes tender when pierced with a fork. Drain, reserving 1 1/2 cups water and set the pumpkin aside.
Pour the reserved pumpkin cooking water back into the saucepan. Add the brown sugar and bring to a boil.
Add the pumpkin to the saucepan, turn heat down to medium low and simmer for about 15 minutes. Remove from heat and let stand for 8-10 hours.
Divide into 8 servings and enjoy!
